Boozy Strawberry Birthday Cupcakes

It’s my birthday and I’ll have a boozy cupcake if I want to. YES, it’s my actual birthday today (May 3rd). After a crazy day at work after such a relaxing weekend away, I needed to make some of these Boozy Strawberry Birthday Cake Cupcakes for my birthday. These are perfect for any May or summer birthday celebrations for those over +21. So fun, colorful and delish.
Makes 18 Cupcakes Prep : 20 minutes Bake : 21 minutes
Strawberry Cupcakes Ingredients
1 Box strawberry cake mix
3 large eggs
1 Cup whole milk
1⁄2 Cup unsalted sweet cream butter, softened
Directions
Preheat oven to 350 degrees and line a cupcake pan with white cupcake liners
Using a standing mixer or hand mixer, beat the cake mix, eggs, milk, and butter until combined and smooth
Fill cupcake liner about 3⁄4 way full and bake in the oven for 20-22 minutes or until a toothpick comes out clean
Allow to cool while you make the frosting.
Vanilla Frosting
Ingredients
2 Cups unsalted sweet cream butter, softened 4 1⁄2 Cups powdered sugar
5 tbsp heavy whipping cream
1 tbsp pure vanilla extract
Pink gel food coloring
1 – 10.5oz Funfetti sprinkles – Found in round containers at walmart 2 large piping bags fitted with wide star tips
18 mini cupcake pipettes
Birthday Cake flavored vodka
Strawberries, cut in half
1 small jar of Maraschino cherries
Directions
Follow the directions on the mini pipette package to know how to fill the pipettes with the vodka
Using a standing mixer, beat the butter, powdered sugar, heavy whipping cream, and vanilla until fluffy, cream and holds a peak
Scoop half of the frosting into another bowl and mix in a few drops of pink gel food coloring
Scoop the pink frosting into one of the pink bags and scoop the white frosting into the second piping bag
Using the white frosting, pipe a thick ring of frosting around the top of the cupcake Pipe a slightly smaller ring of pink frosting on top of the white frosting
Pipe another smaller ring of white frosting on top of the pink frosting.
Pipe a smaller ring of pink frosting on top of the white frosting.
Pipe a dollop of white frosting on top of the last pink ring Coat the bottom. half of the cupcake frosting in the sprinkles Place a strawberry on top of the cupcake.
Place a cherry next to the strawberry
Place a pipette in between the strawberry and cherry

That’s an great way to add the vodka! Using pipettes would keep your cupcakes from getting soggy if you want to prepare them in advance.
