Who else is ready for some more Valentine’s Day treats? My favorite has to be these Valentine’s Day heart cake pops. These Valentine’s Day pops may be simple, but I think they are still so pretty! Who needs flowers when you can have some cake pops? 😉 Although I’d still accept flowers if anyone brought me some. <3

Valentine’s Heart Cake Pops

Prep time: 20 minutes

Total time: 40 minutes

Makes 4

Ingredients:

2 cups of crumbled cake or cookie

1 cup of icing

2 cups of melted red chocolate wafters

¼ cup of white chocolate chips

Sprinkles

sticks

Instructions:

  1. Melt white chocolate chips 
  2. Pour a small amount into the molds and scoop the melted chocolate up the sides. When you are scooping, make sure that you get the chocolate up the sides in the middle of the mold as well. In order for the cake pops to look complete try to get a good thick layer on the sides.
  3. Place molds into the fridge for freezer for 10 minutes to allow the chocolate to set. 
  4. Crumble cake or cookies in a bowl and mix with icing. Press some into the set molds and then top with remaining chocolate. 
  5. Insert sticks and place back into the freezer to set for about 10 minutes
  6. Pop out of molds
  7. Drizzle melted white chocolate and garnish with sprinkles

Easy Zucchini Nachos

Looking for a healthier option for game day food? The big game calls for game day food, but what if you are trying to eat a little healthier? Snacking doesn’t have to be unhealthy. These Zucchini Nachos are super easy to make, delicious, and definitely a better for you choice. Made with lots of fresh produce from Melissa’s Produce, you can’t go wrong with these! Perfect for game day, or any other day of the year!

Zucchini Nachos ready to eat!

Ingredients

Makes about 4-5 servings

  • 4 medium zucchini, cut into 1/4 inch slices
  • pepper to taste
  • 2 tablespoons oil
  • 1 cup black beans
  • 1 cup corn
  • 1 cup cheese, shredded
  • 1 cup tomato, diced
  • 1/4 cup each of green and purple onions
  • 1 jalapeno, sliced
  • 1 avocado, diced
  • 1/4 cup cilantro, chopped
  • 1 tablespoon sour cream
  • 2 tablespoons lime juice
  • any other nacho toppings you are craving

Directions

*Preheat oven to 400 degrees. Spray a baking sheet with nonstick spray.

*After slicing the zucchini, toss the zucchini in the oil and pepper.

*Lay zucchini slices on the baking sheet.

*Bake until slightly tender for 5 minutes, flip them over and then bake for another 5 minutes.

*Top zucchini slices with the black beans and cheese.

*Bake until the cheese has melted, about 3-5 minutes.

*Top the cheesy zucchini with corn, tomato, onions, avocado, cilantro, sour cream, a little bit more cheese, jalapenoes and lime juice.

Perfect Pumpkin Pie Mango Smoothie Ready to drink!

This perfect pumpkin pie mango smoothie is the perfect treat to kick the new year off with. The pumpkin paired with mango is such a fun and unexpected combination. I love this smoothie and it’s the perfect winter day treat for a little taste of summer.

When Melissa’s Produce sent me some Australian Mangoes I knew I wanted try a smoothie with one of them. I must say, Wow! These mangoes are perfect for smoothies! They are fiberless, creamy like a custard, sweet and super flavorful. These Australian beauties will shock you with their lusciousness! Perfect for smoothies, salads, salsas, or just all on its own!
