Nothing says summer quite like some fresh juicy peaches! These summer peach crumble bars are a special summer treat! Fresh peaches all on their own are one of the great treats of summer—and also make for healthy desserts or snacks. When you’ve eaten your fill of ripe, juicy peaches as-is, this peach dessert recipe will keep you in peachy deliciousness all season long. Take advantage of those sweet summer peaches all summer long! There are so many delicious things to make with peaches and I will be sharing a couple ideas in the coming weeks. First are these amazing peach crumble bars, made with fresh juicy peaches from Melissa’s Produce!

Summer Peach Crumble Bars

Cook Time: 45 minutes

Ingredients

Base:

10 tbsp unsalted butter, softened

½ cup granulated sugar

1 large egg

¼ tsp cinnamon

¼ tsp salt

1 2/3 cups all-purpose flour

Filling:

1 1/2 lbs peaches*

Zest 1 lemon

3 tbsp granulated sugar

Crumble:

6 tbsp unsalted butter, softened

½ cup brown sugar

1 cup all-purpose flour

¼ tsp salt

Directions

Grease and line a 9 x 13” baking pan with parchment paper. Preheat oven to 350° F.

Make base:

In a large bowl, blend butter, sugar, and egg together with a stand mixer or handheld beaters on medium high until creamy and light.

Add cinnamon, salt, and flour, blending on low until just combined.

Press mixture into pan. To make this easier, put several large dollops of mixture in different portions of the pan and push then together with your fingertips. Pat into an even layer.

Chill in fridge while preparing remaining layers.

Make filling:

Slice peaches into ¼” or thinner slices.

Toss with lemon zest and sugar.

Make crumble topping:

On low speed, blend all ingredients until just combined into small crumbles but still a bit powdery**.

Toss further with your fingers until slightly larger crumbs form (no larger than a pea).

On the chilled base, spread an even layer of peaches.

Sprinkle the crumble on top of the peaches as evenly as possible, but do not press down.

Bake for 45-50 minutes, or until golden on top and peaches are slightly bubbling at edges.

Cool in pan for at least 20 minutes before removing and allow to cool completely before eating.

Will store in a sealed container in the fridge for a couple days, but will not be as crisp.

For an even cooler treat, top with some vanilla or vanilla bean ice cream! YUM! These summer peach crumble bars will be a hit with everyone!

Notes

*Any variety of peaches work. This sample used a mixture of regular yellow, white, and white donut peaches. Just note that donut peaches are sweeter than standard yellow or white peaches, so adjust sugar accordingly.

**Reduce the number of dishes you have to wash: do this in the same bowl you used for the base.

It’s been very hot and humid around here lately. The perfect kind of weather to enjoy an ice cream sundae creation. Luckily, Albertsons and Safeway are having a HUGE Anniversary Sale! You can stock up on a lot of your favorite ice cream treats like Breyers, Ben & Jerry’s, Klondike Bars and more! Of course there are tons of other items to choose from as well. Talk about a sweet sale! My personal favorite ice cream treat to get on these hot summer days is some plain vanilla ice cream so that I can load it up with all of my favorite toppings. 😉

I go to the gym, a lot. Since it’s the summertime and I have more free time, we’re talking like 5-7 days a week. Albertsons is right behind my local gym, so it’s very convenient for me to swing by here to grab a few things I need or stock up for a fun get together with family and friends.

Haute Cuisine  with Dominique’s Kitchen!

Are you ready to go on an adventure to Paris that will delight your taste buds?  Do you have your passport ready to go? Well, if you don’t (at least if you are in the US)  you are in luck! Dominique’s Kitchen in Redondo Beach, CA is here!! Opening in October of 2012, this is an absolute jewel of a restaurant tucked in on the famous Pacific Coast Highway just minutes from the ocean & pier. Walking in, you truly feel transformed as if you are leaving the L.A. area and entering another country. Dominique’s is an intimate bistro, the tables are close & cozy to one another & the warm family atmosphere makes you feel right at home. Be ready to make some new friends when you visit Dominique’s! I have been to Paris, France before, so walking into this blissful place brought back many happy memories. I felt like I really was back in Paris.

The restaurant space is small enough to enjoy an intimate dinner, yet large enough to not feel claustrophobic. There is patio seating for the warmer summer days and nights outside as well as an indoor type patio that is covered with heaters should it get too cold.

DominiquesKitchenWhen the opportunity arose to review Dominique’s I jumped at the chance to try out this new Euro-French restaurant. A French restaurant, here, nearby? I didn’t have to fly to Paris for some good French food? Yes, Please! I have been craving a trip back to France, so this was a wonderful  substitute. Now, anytime I’m missing Paris, I just need to hop in the car and my new-found Paris vacation is just a hop, skip, and jump away at Dominique’s in Redondo Beach! I brought my fellow blogging buddy and dear friend Kirsten over at SoCal Kids Outdoor Adventures with me as I knew she could use a vacation just as much as I did and she loves to be adventurous and try out new things! 😉
