Life is the bubbles with these Under the Sea Boozy Popsicles! Ice pops are a great summer indulgence and, for adults, boozy popsicles are even better! These frozen little treats are spiked with alcohol and bring a childhood favorite into the cocktail-loving world. So don’t be such a guppy, cool off with these fun Under the Sea Boozy Popsicles.

Total TIme: 4 hours and 15 minutes

Ingredients:
Green Portion
2 oz Midori Liquor
1 oz Green Apple cocktail syrup
2 oz Light colored margarita mix ( no Yellow or Green shades ) 2 cups of Ice

Blue Portion
2 oz Blue Curacao
1⁄2 oz Blue Raspberry syrup
3 oz Light colored margarita mix ( no Yellow or Green shades ) 2 cups of ice

Yellow Portion
1 oz Tequila
1 oz Triple Sec
2 oz Pineapple Juice 2 cups of Ice

Tools:
Small ice cream scoop
4 small containers or bowls

Popsicle mold ( 6-9 )

Instructions:
Green Layer:
In a blender add all of your GREEN cocktail ingredients. Blend on high until smooth.
Pour into a small container
Set to the side

Blue Layer:
In a blender add all of your BLUE cocktail ingredients.

Blend on high until smooth. Pour into a small container Set to the side

Yellow Layer:
In a blender add all of your YELLOW cocktail ingredients. Blend on high until smooth.
Pour into a small container
Set to the side

Creating the Popsicles
Using your ice cream scoop, scoop small dollops of the green, blue, and yellow frozen cocktail mixture into a bowl.
Continue to add the avors until all is in the 4th bowl.
Using a spoon or spatula lightly fold / mix the cocktail colors to combine.
You want to see portions of each color.
Using your small ice cream scoop, scoop the mixture into the popsicle mold.
Lightly tap the mold on the counter to have the mixture to settle to the bottom and eliminate bubbles.
Use a small spatula to press the mixture down rmly into the molds.
Add more mixture if needed.
Insert the popsicle stickers in the center
Place in the freezer for 4 hours before serving

Dipped Smores Popsicles anyone? It’s fall, I think?! Well the calendar says it is…. but it’s been in the 90-100’s still here in Southern California! Normally you might be thinking fall=bonfires and making s’mores! It’s a bit hot and humid here to be wanting to sit around a fire right now, plus with it being fire season it just isn’t the best idea all around. So how about something to cool off with that’s just as fun!!? Then try making these dipped s’mores popsicles!

Dipped Smores Popsicles

These are so easy to make and so delicious! They are sure to be a hit with your crew.

Ingredients

2 cups of chocolate milk

2 tbsp sweetened condensed milk

Marshmallow fluff

Graham cracker crumbs

Instructions

  1. Mix chocolate milk and condensed milk.
  2. Pour into molds and insert popsicle sticks and freeze overnight.
  3. Remove popsicles from molds and dip in marshmallow fluff.
  4. Sprinkle graham cracker crumbs on top.
  5. Place back into the freezer until you are ready to eat!

It’s summer and it’s really starting to heat up outside. These Blueberry Cheesecake Popsicles are the perfect way to cool down! Three of my favorite things: Blueberries, Cheesecake, and popsicles, all wrapped up into one tasty treat! It doesn’t get better than that! Featuring fresh Blueberries and limes from Melissa’s Produce.

Blueberry Cheesecake Popsicles

Ingredients

(makes 6-8)

1.     1 ½ cups blueberries (fresh or frozen)

2.     1 8-ounce cream cheese packet

3.     ½ cup Greek yoghurt

4.     5 tbsp honey (divided)

5.     1 tsp lime juice

6.     ½ tsp lime zest

7.     6-10 Shortbread Cookies

8.     2 tbsp melted butter (25g)

9.     2 tbsp water (if using fresh blueberries)

Method

Blueberry Compote

·      If using frozen berries, remove and leave to thaw for at least 1 hour before starting. Drain most the liquid, leaving about 2 tbsp.

·      Put blueberries and 1 tbsp of honey into a small saucepan over medium. If using fresh blueberries, add the 2 tbsp water too. Cook until the blueberries soften, mashing about half the blueberries up with the spoon. Leave the rest of the blueberries whole.

·      When done (almost jam-like consistency), remove from the fire and leave to cool a little
